We use only non-GMO certified, unbleached, stone-ground flour for our sourdough breads.   Bleaching flour removes nutritional aspects of the flour.   High-speed milling creates heat which damages nutritional aspects of the flour.   The yeast is wild-caught so the bread contains flour, water and salt only.   The slow process of making sourdough bread grows beneficial bacteria which metabolise any chemicals natural or otherwise, contained in the flour, making it non-allergenic to eat.   The bacteria are beneficial, sugar-metabolising microbes which is healthy for the intestinal tract.   And yet, most of the goodness is in the taste of it!!!   Order Tuesday for Thursday.
