Sweet red and yellow peppers are excellent sources of carotenoids, containing 30 different memebers of the carotenoid nutrient family.   A recent study (Spain) found that only two vegetables, sweet peppers and tomatoes, contain at least two thirds of these nutrients:   Vit C, Vit E and six carotenoids (alpha-carotene, lycopene, lutein, cryptoxaanthin and zeaxanthin).   Carotenoids give food its vibrant colour and as such are powerful anti-oxidants.

Uses:

Chop, slice, dice, use in salsa, wraps and salad.   Diced coloured peppers mixed with diced tomato just seasoned with salt and cracked pepper, make an excellent midday snack or pre-meal starter.   It tastes fresh, and contain many nutrients that revive tired bodies and minds, that is if they are organically grown and nutrient dense.

Chopped or sliced red and yellow peppers are an excellent foil for fried foods such as strips of chicken breast or medallions of pork fillet.   Just add olive oil and a splash of soy sauce to the pan, with lots of generous slices of red and yellow pepper, and the sliced chicken or the pork medallions.   Fry very briefly until the meat is barely done, rest for a minute to finish, serve and eat.   This is a delightful meal that takes literally 5 minutes from start to finish.   You want the meat juicy and tender and the peppers slightly crisp.
